The truth is out. I’m a steak and potatoes, spaghetti and meatballs type girl. I’m a Mansfield Deli girl (#gogreenhornets). I’m a Thanksgiving Turkey girl. And sushi, hello! I admit I indulge but I’m giving this carnivorous mind and body a 7-day vegan challenge.
What is being Vegan? A culinary and lifestyle choice for a person who does not eat or use animal products. This means all meats, fish, eggs, milk, and yikes- cheese and even butter. A strict vegan won’t own or wear animal products. Let’s not jump the gun and say I’m a strict Vegan because honestly, I’m selfishly not ready to give up my leather Moto-Bike jacket yet, but I’ve gotta start somewhere so I’ll begin with what I ingest.
My why: I watched Cowspiracy and I recommend you do too. I’m willing to change my skepticism and attitude to HELP save the planet. I’ll start with 7 days, hope for 10, maybe a month and beyond if my common sense has anything to say. If I can realistically keep this up then that’s my plan. Am I a saint? Hell no. Am I saying meat-eaters are horrible? Of course not, I’m one of you! Can I make these changes? I can sure try!
My goal: complete a seven-day vegan meal challenge using a meal plan from PopSugar. They include meals for 7 nights with recipes, nutritional facts, and even a grocery list. Considering most are 4-6 servings, I plan to freeze and use leftovers for lunch while having a fruit smoothie each morning for breakfast with fruits or almonds for my snacks. I already got my groceries set for delivery with an $85 total.
